Do I need the blade replaced on my meat slicer?

People often assume they need a new blade on their meat slicer just because it's old and dull and m

ost service techs are all too happy to agree with them and 5 minutes later they have a new blade and a $350 invoice along with it. So how do you know when your deli slicer REALLY needs a replacement blade? A common mistake people make is that because they're sharpening their meat slicer continuously and it's still dull then the blade must be worn out. More than likely however it's the sharpener and sharpening stones that are at fault and having a new set of stones installed will usually do the trick. Make sure both stones are spinning when you apply pressure and if you see sparks flying then that means it's working. Squirt the stones with a degreaser or window cleaner as you go, this will keep them cool and also keep sediment from collecting on the surface and robbing them of necessary grit. Another misconception is that it's time for replacement because there's a space or gap between the blade and the meat table. However the meat table is adjustable and a service technician can usually close that Gap and put off a blade replacement for another couple years. So how do you know for sure without having to call out the service tech and pay $150 invoice? There's only one surefire way and that is to get out the tape measure.
