It is not a good idea to slice frozen meat with a meat slicer. Frozen meat is hard as a rock and would dull the slicer blade out tremendously as well as place major strain on the motor. On the flipside...slicing completely thawed beef is extremely messy and nearly impossible. So the technique that most cheesesteak shops use is to freeze the beef overnight and then slightly thaw it out for a set amount of time but not too much. The exact amount of time to thaw is up to each restauranteur to figure out.
